Okonomiyaki: Japanese Pancake
Okonomiyaki is a savory pancake from Japan. “Okonomi” literally means “however you like it”, as you can use whatever batter and toppings you like. Try our vegetarian version!
- 8 Tbsp gluten free self-raising flour
- 2 eggs
- 8 Tbsp water
- 50g cabbage, in cubes
- 25g onion, in cubes
- 25g carrots, in cubes
- 25g sweet corn kernels
- 15g cilantro, coarsely chopped
- 1 Tbsp Lee Kum Kee gluten-free light soy sauce
- 1/4 ground white pepper
Dressing
- 4-6 Tbsp Sriracha Mayo
- 1 tsp seaweed powder (optional)
- 1 tsp cilantro, coarsely chopped (optional)
- Place all ingredients in a large bowl and mix.
- Heat 2 tablespoons of oil in a pan. Add the batter. Use a ladle to flatten the pancake until they are approximately 2 cm thick.
- Fry the pancake on the lowest setting until it turns golden brown on both sides.
- Place the pancake on a plate and pour sriracha mayo on top of it. Then sprinkle the pancake with seaweed powder and cilantro before serving the dish
