- 2 large eggs
- 2 slices sandwich bread
- Kaya spread
- Cold butter or peanut butter
- Ground white pepper
- Soy sauce (to taste)
Kaya toast with soft-boiled eggs is a classic Malaysian breakfast dish. Of course, the meal would not be complete without a cup of Ipoh white coffee. Try it now!
Accompaniment:
- Ipoh white coffee
- Bring water to a boil in a pot, then turn the heat down and let it come to a slow simmer.
- Gently lower the eggs into the pot and make sure that they are completely covered by the water. Let them cook for 5 to 7 minutes, depending on how runny you like your eggs.
- In the meantime, toast the bread slices. Spread a generous layer of kaya on one slice of the bread and place a thin slice of cold butter on the other. If you are avoiding dairy, you can replace the cold butter by peanut butter. Place the two pieces of bread together like a sandwich and cut it into half.
- Remove the eggs from the pot and place them under cold running water for about 1 minute before cracking them into a bowl. Add soy sauce to taste and sprinkle with ground white pepper. Serve warm.
Suggestion
