Coconut Rice Flan with Durian and Mango

Based on 10 persons

Bottom:
- 200 gram gluten-rich flower
- 5 gram of dry yeast
- 3 teaspoons of sugar
- Pinch of salt
- 30 gram of melted butter
- 45 gram of egg
- 70 ml hand-warm melk

Filling:
- 800 ml coconut cream
- 115 gram glutinous rice
- 100 gram of sugar
- 2 teaspoons vanilla extract
- 2 eggs

Topping:
- 1 pack frozen mango
- 1 pack durian without seed

Extra needs:
- Rice cooker
- Blender

Information
  1. Preparation: Wash the rice until its clear and soak the rice for three hours or let it rest for a night in the water. Keep 2 pieces of mango apart for the garnish.  Puree the mango and durian seperately.
  2. Bottom: Put the flour, yeast, sugar and salt in a bowl. Then add the butter, egg and milk. Kneed the dough softly and smoothly until it is no longer sticky. Make a ball and put the dough back in the bowl. Cover the dough with a tea towl and let rise it up for an hour or until it has doubled in volume.
  3. Meanwhile you can make the rice filling: pour out the water. Put the rice in a rice cooker with 400ml coconut milk. Stir it well until everything is mixed up. Turn the rice cooker on. When the rice is cooked, scoop the rice in a bowl. Then add the sugar, vanilla extract with the rest of the coconut milk. And then you stir everything well until the sugar is dissolved. Cool down the rice milk and after that add the whipped eggs. Stir again and put it aside.
  4. Take the dough from the bowl and knead it a couple times to a smooth ball. Roll the dough out that is larger than the surface of your baking mold.
  5. Use a rolling pin to pick up the dough and cover the baking mold. Gently press the sides firmly. Cut off the remaining dough on the side with the back of your knife and take it off. Prick some holes in the doug and let it rest for 5 minutes.
  6. Pour the rice filling in the baking vorm and bake the flan for 25 minutes with 190 degrees (Upper- and underheath). The filling must be solidified. Let the flan rest for 5 minutes in the baking mold, before you get it out. Let the flan cool down on a grid.
  7. Once the flan is cooled down, you can fill it with mango and durian.
  8. Enjoy your meal!
