Light soy sauce is made from fermented soybeans with wheat, salt, water and yeast. The light soy sauce is briefly matured and is therefore lighter in color and taste, but saltier. Light Soy Sauce from Lee Kum Kee has a more intense soy flavor than normal soy sauce due to its special preparation.

This soy sauce is naturally brewed, with soy beans that have not been genetically modified. It is added as a seasoning to all kinds of dishes and marinades. This is in contrast to dark soy sauce, which is usually not used for taste but for color. Light soy sauce can also be used as a dipping sauce, possibly in combination with other seasonings.
