This fresh and healthy lentil salad is made with leafy greens and tomatoes, and is seasoned with a sweet mango chutney dressing. Perfect for lunch!

  • 250g green lentil
  • Juice ½ lime
  • Juice ½ lemon
  • 1 Tbsp cider vinegar
  • 1 pinch salt
  • 1 red onion
  • 2 Tbsp extra virgin olive oil
  • 1 tsp ground cumin
  • 1 small garlic clove
  • 2 Tbsp sweet mango chutney
  • Handful coriander
  • 250g cherry tomatoes
  • 85g baby spinach

Information
  1. Boil the lentils. Drain them, rinse them well, then drain them again thoroughly.
  2. Slice the red onion into thin rings. Crush the garlic clove. Chop the coriander and cut the cherry tomatoes in two. Wash and thoroughly dry the baby spinach. Mix the lime and lemon juices, the cider vinegar and a pinch of salt in a salad bowl. Then, toss in the red onion rings.
  3. Whisk together the olive oil, cumin, garlic and mango chutney, then toss the mixture into the salad bowl with the rest of the ingredients.
