Longkou vermicelli bean vermicelli or so-oen from Xiang Long are portioned vermicelli, made from peas, maize starch and water. Longkou vermicelli belongs to the glass noodle. This vermicelli is transparent after cooking and has something sturdy from bite. It does not have much flavor of itself but easily absorbs other flavors.
This multiple Longkou vermicelli can be prepared as a noodle with the ingredients, as part of stir-fries or finely cut as an ingredient for spring rolls or dumpling fillings. Longkou vermicelli is also used for cold noodle dishes.
