Qian Hu Glutinous Rice Wine is made from sticky glutinous rice, water and wheat flour. The glutinous rice is steamed in large kettles, then it is fermented. The fermentation forms a rice slurry and the pressing releases the rice wine. To get a color, caramel is added and the rice wine is briefly heated to stop the fermentation process. Due to its slightly sweet taste, this rice wine is drunk as a cold or warm aperitif. It is also used as a cooking wine.
