Pad Thai: Thai Stir Fried Rice Noodles
Pad Thai is a dish made of fried rice noodles, popular in Thailand. The rice noodles are prepared in a wok, containing ingredients such as eggs, shrimps and different spices.
- 150g dried rice noodles
- 300g raw shrimps
- 3 Tbsp tamarind paste
- 2½ Tbsp Ca Com fish sauce
- 2 Tbsp palm sugar
- 3 Tbsp vegetable oil
- 3-4 garlic cloves, minced
- 2 eggs
- 85g Chinese chives
- ¼ tsp chili powder, to add flavor
- 2 Tbsp dried shrimp, ground/crushed
- 2 Tbsp pickled turnips, chopped
- 2-3 Tbsp roasted peanuts
- 180g bean sprouts
- 3 green onions, in rings
Garnish
- 1 red pepper
- 1 lime
- Coriander leaves
- Soak the rice noodles in hot water for 1-2 minutes until it's soft, then drain.
- Peel the shrimps and remove the black vein. Cut each shrimp open along the back, but not completely in half.
- Finely chop the garlic, green onions and the red pepper. Chop the cashew nuts into coarse pieces and cut the lime into 4 pieces.
- Heat the oil in a wok and stir-fry the garlic on medium heat until it's golden brown. Add the shrimp and fry for 2 minutes. Scoop the shrimps out of the wok with a slotted spoon.
- Pul oil in the wok, add the eggs and stir-fry it for 1 minute. Then add the rice noodles and stir-fry for a few secondes.
- Add the tamarind fish sauce mixture, chili paste and half of the cashew nuts. Add the bean sprouts, shrimps and green onions.
- Fry the rice noodles and season it with salt and pepper.
- Put the rice noodles in a bowl and sprinkle the rest of the cashew nuts over it. Garnish with red peppers and coriander. Place the lime on the edge of the dish and serve it out.
