Peking Duck With Crêpes

Peking duck is an ancient Chinese dish that was once served only to the emperor. Nowadays it can be found in almost every Chinese restaurant. The duck is roasted, which gives it a thin, crispy skin. It is often served with a lot of skin and little meat. Delicious in a crêpe!

Information

Preparation method:

  1. Remove the duck from the freezer the night before and let it thaw in the refrigerator.
  2. Cut the spring onion and cucumber lengthwise and make thin strips. Place them on a small plate and put it in the refrigerator for a while.
  3. Preheat the oven to 200-210 ºC. Place the duck in an ovenproof dish and roast for 30 to 35 minutes. It can be colored golden brown so that it is nice and crispy.
  4. While the duck is in the oven, fill the steamer with water and bring it to the boil.
  5. Place the frozen pancakes on a plate and place it in a floor of the steamer. Steam it for 10 minutes on low heat.
  6. Once the duck is ready, remove it from the oven and let it stand for a few minutes. Then cut the duck into thin pieces with a sharp knife.
  7. Serve this on a warm plate. Place the sauce in a bowl. The dish is ready to serve

To serve:
Each guest must roll their own pancake. You will proceed as follows:

  1. Place a pancake on your plate. Brush it thinly with hoisin sauce.
  2. Take 1 to 2 strips of duck and place them in a line in the middle. Do the same with the spring onion and cucumber.
  3. Fold the surprises of the flap inward and roll it up.
  4. Make sure the seam is at the top
