Fried pork fillet is a classic dish. Make it more special with a single ingredient: salted egg yolk! It tastes perfect with a bowl of steamed rice… yummy!
INGREDIENTS
- 250g pork tenderloins
- 2-3 salted egg yolk
- 1 stem curry leaves
- 1 red chilli
- 1 Tbsp butter
- 2 Tbsp unsweetened condensed milk
- 1/3 tsp salt
- ½ tsp sugar
Marinade:
- ½ Tbsp oyster sauce
- ½ Tbsp light soy sauce
- ½ tsp sugar
- ½ tsp sesame seed oil
- 4 Tbsp corn flour
- 1 egg
- 1 pinch pepper
Kitchen tools:
- Steamer
PREPARATION
Mix all the ingredients of the marinade together in a bowl. Cut the meat into bite-sized pieces, then marinate them for 30 minutes. Deep fry the meat pieces until they are done, drain them well and set them aside.
Steam the salted egg yolks for 10 minutes, until they are cooked. Let them cool, then crush them until they are finely crumbled.
Remove the stem of the curry leaves. Cut the red chili into slices. Melt the butter in a wok and add in the curry leaves. Fry everything until it is fragrant, then add in the cut chilli, salted egg yolks, evaporated milk and pre-cooked meat. Toss well. Add salt and sugar to taste. Continue stirring until everything is well combined.
