Qingtuan dumplings are the ultimate festival food for Qingming, the Chinese Memorial Day. The glutinous rice dough makes the dumpling deliciously chewy. It is traditionally filled with red bean paste, but nowadays comes in many different flavors. There are sweet and savory versions, so there is something for everyone. Ingredients:
- 100g glutinous rice flour
- 70g vegetable juice
- 30g wheat starch
- Bean paste
- 10g lard
- Boiling water
How to make it:
- Put the wormwood or leafy greens in a blender. Add some water and blend it until it becomes smooth vegetable juice.
- Put the glutinous rice flour in a bowl, add the vegetable juice and mix it well until it becomes a smooth dough. Put it aside.
- Grab another bowl. Add boiling water to wheat starch and mix it until it becomes a dough.
- Put both doughs together and knead it until it becomes a smooth dough. Then add the lard. Knead it until it becomes a shiny mass.
- Divide the dough into 10-12 pieces of similar size. Flatten it, fill it with bean paste, then close it. Make it a round and smooth ball. Repeat the process for the other dumplings.
- Put steaming paper in the steamer. Put the dumplings on the paper. Make sure the dumplings don’t touch. Steam it for about 10 minutes.
Variation tips:
- The dough is usually colored green by using wormwood, but instead, you can also use green tea powder or leafy greens, such as spinach
- Instead of bean paste, you can also use sesame, chopped peanuts or meat to fill the dumpling
Preservation tip:
Finish the dumplings within 2 or 3 days. Wrap it in plastic foil to preserve the taste, shape and texture.
