Rakki Japonica Sweet Rice (or glutinous rice) is also called Mochi Rice. The rice grains are opaque, shorter, and rounder than regular long grain glutinous rice. Because of itslow amylose content, glutinous rice is sticy and does not harden when cooled. It is ideal for making desserts, mochi rice cakes and Osenbei rice crackers.
