These soft, light and fluffly cupcakes are cooked in a steamer rather than an oven. Surprising, isn’t it? Enjoy them as a healthy breakfast or as a snack!
INGREDIENTS
- 150g sugar
- 350ml water
- 360g self-rising flour
- 1 tsp vanilla extract
- 2 tsp baking powder
- 2 tsp water
- Food coloring (green, orange and yellow)
Kitchen tools:
- Steamer
- 12 silicone cupcake molds
- 3 bamboo skewers
PREPARATION
Mix lukewarm water with the sugar in a mixing bowl, stir until the sugar has dissolved. Then sift the flour in three parts into the mixing bowl. Mix the flour with the sugar water after each sifting turn, until all has dissolved.
Mix the baking powder with two teaspoons of water in a small bowl, add this to the batter. Then add the vanilla extract and mix all well
Divide the batter into three batches, to make cupcakes in three different colors. Dip the tip of a bamboo skewer in one of the three color jars, then add it to one batch. Don’t use too much food coloring, otherwise the cupcakes will taste bitter. Repeat this for the other two batches.
Divide the batter over the cupcake molds.
Steamer
Fill the lowest layer of the steamer with sufficient water, and bring it to a boil. Then put the plate with the cupcakes on the steamer, and cover with the lid. Steam the cupcakes for 25 minutes over high heat until done.
