Telur balado is an Indonesian dish consisting of hard-boiled eggs sautéed in sambal, a spicy chili sauce. The stir-frying make the egg’s outer layer extra crispy and coated with sweet and sour flavours.

INGREDIENTS:

  • Bamboe Balado seasoning paste
  • 250g boiled eggs *
  • Fried potatoes
  • 2 large red chili peppers
  • 1 tomato
  • 3 lime leaves
  • 4 Tbsp oil
  • 30 ml water

PREPARATION
Deep-fry sliced potatoes until golden brown, set aside.
Heat 4 tablespoons of oil in a skillet. Sauté the seasoning paste,
large red chili slices and mashed tomato.

Add the boiled eggs and lime leaves, sauté until half done, then add the fried potatoes. Pour 30 ml water, simmer for 5 minutes.

*Variation tip
You can replace boiled eggs with beef, chicken, potatoes, tempeh or shrimps.
