Try this roasted duck in some creamy, spicy and slightly sweet Thai red curry! It is delicious and easy to make thanks to Suree’s paste.

INGREDIENTS

  • 50g Suree Thai Red Curry Paste
  • 400ml coconut milk
  • 250g roasted duck breast (bite-sized)
  • 400g egg plants
  • 20g garden peas
  • 10g red chilli
  • 10 sweet basil leaves
  • 1½ Tbsp fish sauce
  • Jasmine rice (cooked)
  • Salt and sugar
  • 2 Tbsp vegetable oil

PREPARATION

  1. 1. Heat the oil in a pan and add the curry paste.

  2. 2. Add the duck breasts and stir-fry it well.

  3. 3. Add the egg plants, garden pea and coconut milk.

  4. 4. Season with fish sauce, salt and sugar.

  5. 5. Garnish with basil leaves and red chilli peppers.

  6. 6. Serve with jasmine rice.
