Are you out of ideas for Meatless Monday? Then try this tofu curry with sweet potato! It is simply delicious, especially with steamed rice!

INGREDIENTS

  • 200g firm tofu
  • 120g curry paste
  • 250ml coconut milk
  • 1 onion
  • 2 garlic cloves
  • 100g okra
  • 100g carrot
  • 200g sweet potato
  • 1 tsp fish sauce
  • 1 Tbsp oil

PREPARATION


Take the tofu out of the packaging, drain it, then slice it into cubes. Slice the okra into diagonal strips. Slice the carrot and sweet potato into cubes of 2 cm. Slice the garlic into fine bits and the onion into strips.



Put the carrot and sweet potato in a pan, and add water until they are just below the surface. Cook them for about 10 minutes, then scoop them up. Save 100ml of the cooking moisture.



Heat oil in a pan. Add the onions and garlic, stir well until the flavours are released. Then add the curry paste, and stir-fry until the aroma is released. Add the coconut milk and the cooking moisture, and stir. Then add the okra, carrot and sweet potato, and cook them for about 5 minutes. Let the sauce thicken a bit, and season with the fish sauce. Finally, add the tofu and cook it for a minute. Stir well.
