Humba is a Filipino dish that consists in sweet braised pork. Try this version with tofu instead of meat!

INGREDIENTS

  • 125 ml Mama Sita’s Barbecue Marinade
  • 1 tsp Mama Sita’s Oyster Sauce
  • 200g plantain
  • ½ kg fried tofu
  • 2 Tbsp dried banana flower (bulaklak ng saging)
  • 2 oregano leaves
  • 2 bay leaves
  • 3 garlic cloves, crushed
  • 1 star anise
  • 1 Tbsp brown sugar
  • 1½ Tbsp cornstarch, dissolved in 2 Tbsp water
  • 2 hard boiled eggs, peeled and halved
  • 60 ml cooking oil
  • 750 ml water

PREPARATION


Slice the plantain diagonally, about 6 mm thick. Fry the bananas in cooking oil. Set aside.



In a saucepan, mix water, barbecue marinade, oyster sauce, dried banana flower, oregano leaves, bay leaves, sugar, star anise, and tofu.



Bring it to a boil, then lower the heat to a simmer. Add dissolved cornstarch, stir and simmer until the sauce thickens. When almost done, add the boiled eggs.



Garnish with fried plantain.
