Vegan Pumpkin Pie
Indulge yourself this delicious and vegan-friendly pumpkin pie! It is not only extra flavourful, but also easy to make!
- 250ml Vitasoy original soy milk
- 425g pumpkin, boiled and mashed
- 120ml light brown sugar
- 60ml corn starch
- ¼ tsp salt
- 1 tsp vanilla
- 1 Tbsp pumpkin pie spice*
- 1 gluten free and vegan pie crust
* Spice mix for pumpkin pie:
- 3 Tbsp ground cinnamon
- 2 tsp ground ginger
- 2 tsp ground nutmeg
- 1 tsp ground allspice
- 1 tsp ground cloves
- Put the Vitasoy original soy milk in a large mixing bowl, and whisk in light brown sugar, corn starch, vanilla, and salt until dissolved.
- Whisk in the pumpkin pie spice, followed by the pumpkin. Mix until well combined, then pour into the pie shell.
- Bake at 190℃ for 40 minutes or until a knife comes out clean in the center.
