Jianshui Wenzhou noodles are made from wheat flour, water and salt. Originally people used the water from a salt lake in inner Mongolia "Kansui" to make noodles. The water naturally contains sodium carbonate and potassium carbonate, making it perfect for making noodles. The noodles become yellowish in color and more springy.
