Because of its sweet taste, mirin combines well with salty sauces such as soy sauce. Together they form the basis for a traditional teriyaki sauce. Zheng He Yi's Mirin is made from glutinous rice, glucose syrup and alcohol. Mirin is the sweet version of sake. A rice wine with a lower percentage of alcohol and a higher percentage of sugar than sake has. During baking, the alcohol evaporates from the sauce, leaving only its sweet taste and nice glossy layer. Mirin is only intended for cooking.
