Macro Bowl With Adzuki Beans And Miso Dressing
Easy, nutritious and yummy: that’s the macro bowl! A balanced meal containing the macro nutrients carbohydrates, protein and fats. Big plus: you can mix and match with your favorite ingredients.
- Brown rice
- Olive oil
- Hemp seeds
- Black sesame seeds
Toppings:
- Cooked adzuki beans
- Beet
- Carrot
- Cucumber
- Pea shoots
- Hummus
Dressing:
- 4 Tbsp lemon juice
- 2 Tbsp maple syrup
- 2 Tbsp olive oil
- 1-2 tsp gochujang or miso paste
- Prepare the brown rice according to the instructions on the package.
- Preheat the oven at 200°C. Cut the beet into slices and sprinkle with olive oil. Place it on baking paper. Roast the beet for 15 minutes or until it’s soft. Let it cool down.
- In the meantime, rinse and cut the carrot, cucumber and pea shoots. Mix the ingredients for the dressing in a bowl until it has become creamy.
- Put the brown rice in a bowl. Add the toppings. Sprinkle with dressing, hemp seeds and sesame seeds.
