Ingredients
Based on 3 persons
- 190g fried egg noodles
- 1 tbsp dark soy sauce
- ½ tsp chicken stock powder
- 300g bean sprouts
- 2 spring onions
- 1 tbsp sesame oil
- 2 eggs
- 2 tbsp oil
- Place the dried fried egg noodles in a bowl. Then pour boiling water and let it soak for a few minutes until they separate. Drain the water and let the noodles drain in a colander. Pour the dark soy sauce over the noodles, mix everything well and let the dark soy sauce soak in for 15 minutes.
- Cut the spring onions into coarse pieces of 4 cm and rinse the bean sprouts under the tap.
- Heat 1 tablespoon of oil in a pan over medium heat. Beat the eggs in a bowl and then pour the eggs into the pan. Stir-fry the eggs until set and set aside.
- Heat another 1 tablespoon of oil. Add the noodles and stir-fry for 3 minutes, then add the bean sprouts, spring onions and eggs and mix well. Season it with chicken stock powder.
- Finally, pour a dash of sesame oil over the noodles.
