Japchae: Korean Sweet Potato Vermicelli With Vegetables
Japchae is vermicelli made of sweet potatoes (dangmyeon), mixed with several minced vegetables (carrot, onions, spinach, mushrooms) and beef.
- 1 pack Korean sweet potato vermicelli
- Ready-made japchae sauce
- 200g tender beef
- 120g shiitake mushroom
- 1 onion
- 100g minced carrots
- 100g spinach
- Boil the water in a big pan. Add the vermicelli and cook them for 5 minutes. Drain the water and wash the vermicelli under the tap and let them drain well. Use a scissor to cut the vermicelli in pieces of 10 cm.
- Heat 1 tablespoon oil in a pan, fry the onion until become fragrant, and then add the beef and shiitake mushroom. Stir it quickly and then add 4 tablespoons of japchae sauce.
- Blanch the spinach in boiling water and wash it under the tap. Squeeze out the moisture carefully. Finally mix the vermicelli and vegetables and you are ready to go.
