- 20 chicken wings
- ½ tsp salt
- ½ tsp white pepper
- 2 tsp corn starch
- 1 tbsp oil
Sauce mix
- 2 to 3 cubes of red fermented tofu (nam yue)
- 1 tbsp light soy sauce
- ½ tbsp dark soy sauce
- 2 tsp shao xing rice wine
- 1½ tbsp sugar

- Air fryer
- Mash the red fermented tofu in a bowl, then mix in the light soy sauce, dark soy sauce and shao xing rice wine and sugar.
- Wash the chicken wings and pat dry. Place the chicken wings in a bowl, then sprinkle the salt, white pepper and corn starch over the chicken wings. Mix it well and make sure all the chicken wings have a thin layer of corn starch.
- Bake the chicken wings in the air fryer at 180 degrees for 16-18 minutes until they are golden brown and done.
- Heat 1 tablespoon of oil in a pan over medium heat. Add the sauce mix and bring to the boil. Then place the chicken wings in the pan and stir everything well until all wings are covered with the sauce.
