It can be hard to find time to cook during busy weekdays, but this steamed spareribs in black bean sauce are super quick and easy to make! Enjoy them with a bowl of steamed jasmine rice.

INGREDIENTS

  • 1 kg spareribs
  • 1 red chili pepper
  • 3-4 garlic cloves
  • 2 Tbsp fermented black beans (dausi)
  • 1 tsp grated fresh ginger
  • 3 Tbsp water
  • 1 Tbsp potato starch
  • 1 tsp sesame oil
  • ¼ tsp salt
  • 1 tsp sugar
  • 2 Tbsp Shaoxing rice wine
  • 2 tsp light soy sauce
  • 1½ Tbsp oyster sauce
  • 2 Tbsp oil

Garnish:

  • 2 spring onions
  • Cilantro (optional)

PREPARATION
Wash the spareribs and dry with a paper towel. Chop into small pieces. Slice the red chili pepper into rings and mince the garlic.

Put the dried black beans in a small bowl with water, and put aside for 5 minutes. Then rinse it. Put aside one half, and mash the other half.

Mix the potato starch with the spareribs. Add the mashed black beans, garlic, red chili pepper, ginger, sesame oil, oil, salt, sugar, rice wine, light soy sauce, oyster sauce and water. Mix all well. Sprinkle the rest of the black beans on top. Marinate the spareribs for about 1 hour.

Put the spareribs on a heat-proof plate. Steam the spareribs for about 20 minutes over high heat until done.

Sprinkle the spring onions and cilantro on top.
